Junior Blog: 22nd June 2020

Welcome to the Katie Jayne Tutors Junior Blog issue number 9.

The highlight of my week was being able to cuddle my Mum, after not having done so for over three months, this was quite emotional. I hope your experience of getting back to a little normality has been a good one. Hopefully you have been able to hug your Grandma or Grandpa, or perhaps an Auntie or Uncle now that families are allowed a relative into their social bubble. Please write in and tell us about your own experiences, we would love to hear tales of your reunions.

This week we will be looking at the weather in our special feature. It has been a rainy and blustery week, not what we were hoping for in June, but we thought we would take a look at why our weather is changing and how climate change is affecting our world. Your generation will have a large role to play in helping to save the planet in the future. We also have a fabulous World Wildlife Fund competition for you and lots of fun educational activities for you to take part in.

We hope you all have a great week and we shall look forward to catching up with you next time.

Helping To Save Our Planet

Sir David Attenborough explains how humans can take charge of our future and save our planet. I am sure many of you have watched his wonderful series ‘Seven Worlds, One Planet’.  A beautifully filmed series taking in the seven continents: Africa, North America, Europe, Australia, South America, Asia and Antartica, showing us the amazing diversity of life on each continent and talking about how all of us need to look after our planet.

Cook’s Corner

We love cookies in the Katie Jayne office. Nothing better than a cup of tea at elevenses with a cookie. Our favourite is chocolate chip, but you could add other ingredients that you prefer. Everyone will love your cooking antics when you serve up these warm little of yummy treats.

Ingredients

275g/9¾oz unsalted butter, softened

275g/9¾oz soft light brown sugar

225g/8oz granulated sugar

2 large free-range eggs

1 tbsp vanilla extract

475g/1lb 1oz plain flour

2 tsp baking powder

300g/10½oz good-quality milk chocolate, chopped roughly into chunks

Sea salt

Method

Put the butter and sugars into a large mixing bowl. Beat together with an electric hand whisk until smooth and light in colour.

Break in the eggs one at a time, mixing as you break in each egg. Once the eggs are combined, add the vanilla extract.

Sift in the flour and baking powder and mix in with a wooden spoon until completely incorporated. Add the chocolate chunks and mix in until thoroughly combined. Divide the dough in half.

Place each half onto a large sheet of cling film. Roll the dough into a wide sausage shape and wrap in the cling film, twisting the ends to seal. Each sausage will make nine large cookies (but you can roll them smaller and make more). The dough sausages can be frozen at this point. However if you wish to bake them straightaway, chill the dough in the fridge for 30 minutes before use.

Once ready to use the cookie dough, remove from the freezer and allow to warm up enough to slice. Preheat the oven to 180C/350F/Gas 4.

Slice the dough sausage into nine discs and place onto a non-stick baking tray or a tray that has been lined with baking parchment.

Sprinkle each cookie with a tiny pinch of salt and bake in the preheated oven for 20 minutes, or until they are golden-brown on the edge and slightly paler in the centre.

Remove from the oven and transfer to a wire rack to cool before serving.
